Christmas Grinch Pancakes in One Blender Recipe

Preparation: 5-15mins

Cook: 10mins

Ingredients – Part 1 (In Blender):

  • 2 bananas
  • Large handful fresh spinach
  • 2 eggs
  • 1 cup of yogurt
  • 1 tsp cinnamon
  • 1 tsp vanilla*
  • 1 tbsp Hempseeds or Chia seeds*
  • 1/2 cup Milk or Nut Milk (add a little more if needed)

Blend until smooth.

Part 2 (Add to Blender):

  • 1 tsp Baking soda
  • 1 tbsp baking powder
  • Pinch of Salt
  • 1 ½ cups self-raising flour

*Blend till combined. (Optional ingredients marked with )

Method:

  1. Place 1 tbsp coconut oil for pan greasing.
  2. Add Part 1 to the blender until it reaches consistency.
  3. Then add Part 2 until smooth.
  4. Let sit for 10 minutes (only if you have time).
  5. Fry a few tablespoons in the hot pan, flip after you see them bubble.
  6. Cook until done.
  7. Serve with berries, yogurt, peanut butter, maple syrup, or whatever else you can find.
  8. Keep in the fridge for 2 to 3 days. Reheat in the toaster.
