Christmas Grinch Pancakes in One Blender Recipe
Preparation: 5-15mins
Cook: 10mins
Ingredients – Part 1 (In Blender):
- 2 bananas
- Large handful fresh spinach
- 2 eggs
- 1 cup of yogurt
- 1 tsp cinnamon
- 1 tsp vanilla*
- 1 tbsp Hempseeds or Chia seeds*
- 1/2 cup Milk or Nut Milk (add a little more if needed)
Blend until smooth.
Part 2 (Add to Blender):
- 1 tsp Baking soda
- 1 tbsp baking powder
- Pinch of Salt
- 1 ½ cups self-raising flour
*Blend till combined. (Optional ingredients marked with )
Method:
- Place 1 tbsp coconut oil for pan greasing.
- Add Part 1 to the blender until it reaches consistency.
- Then add Part 2 until smooth.
- Let sit for 10 minutes (only if you have time).
- Fry a few tablespoons in the hot pan, flip after you see them bubble.
- Cook until done.
- Serve with berries, yogurt, peanut butter, maple syrup, or whatever else you can find.
- Keep in the fridge for 2 to 3 days. Reheat in the toaster.
